GRILLED ZUCCHINI SALAD
3 Zucchini's, sliced lengthways
6 Broccolini, blanched
Handful of mint
3 Spring Onions, sliced
Juice half of lemon
1/4 Cup Olive Oil
1 tsp MEDITERRANEAN Spice Blend
Toasted Slivered Almonds
Mix olive oil, lemon juice and MEDITERRANEAN Spice Blend in a bowl and coat the zucchini.
Chargrill the zucchini for a couple of minutes on both sides.
Roughly chop broccolini and mint, add to the zucchini with spring onions.
Top with remaining olive oil/spice blend/lemon and toasted almonds + persian fetta.
Serve with crusty bread.
