LENTIL & VEGGIE SOUP
(Prep Time: 10 min |Cooking Time: 25 min |Serve : 6)
2 tbsp Olive Oil
1 cup diced Onion
2 cups diced Carrots
1 cup diced Celery
2 cups Broth ( I use 2 cups water and 1 tbsp ITALIAN Seasoning)
1 can diced Tomatoes ( I use the thick n chunky one)
1 cup chopped Green Beans
1 cup chopped Kale
1 cup chopped Parsley
2 cups cooked Brown Lentils (I put 2 cans of Lentils)
2 cups cooked Jasmine Rice
1. In a large soup pot, saute onion, celery and carrots in olive oil for 5 mins.
2. Add the green beans, broth, tomatoes, parsley, salt & pepper *if desired but dont really need it.
3. Simmer for 20 mins
4. Add in Kale, let it wilt for 2 mins
5. Add in cooked Lentils and Rice.
Serve with your fave crusty bread!
