SPIT ROASTED PORK

Ingredients
2kg Pork Shoulder
Olive Oil
ITALIAN Seasoning Mix
Salt & Pepper
Method
Prepare Pork by scoring the skin.
Mix olive oil and ITALIAN Seasoning Mix into a small bowl, add salt and pepper.
Place the pork into a large pan and pour the juices over the pork shoulder. S
Spread the rub making sure to get as much as you can into the nooks and crannies.
Let the pork marinate for at least an hour. Ideally prepare a day ahead to let the spices filtrate the shoulder.
When ready, take the spit and insert in through the pork shoulder as close to the centre as possible to keep the weight balanced.
Secure the meat.
Roast over low heat until it reaches an internal temperate of 165°F. It should take around 2- 2 1/2 hours.
Once cooked, take off the spit, wrap in foil and let it rest for 20 minutes.
Serve.
