BAKED SWEET POTATOES
- Give them a good scrub
- Keep skin on as it get nice and crispy and contains most of the nutrients
- Rub a little oil, for extra crispy skin
- Use a fork to prick the skin all over so they don't burst
Salt & Pepper
Preheat oven to 425˚ and line tray with baking paper
Prick sweet potatoes all over with a fork
Bake until tender [approx 45 to 50 minutes]
Let cool, then split the tops open with a knife
Top with butter, salt, pepper and seasoning
Selected vegetables chopped
Add a Protein such as Tuna or Chicken pieces.
